Tortelli al Magro 🇮🇹 A beautifully simple, comforting pasta filled with creamy ricotta and spinach, finished in nutty sage butter.

✅ Prep: 1 hr | Cook: 10 mins
✅ Serves: 4 | Difficulty: Intermediate

What you’ll need:
Pasta dough: plain flour, eggs, olive oil, water
Filling: spinach, ricotta, parmesan, salt & pepper
Sauce: butter, fresh sage
To serve: extra parmesan, black pepper
How to: Make and rest the pasta dough → prepare spinach and ricotta filling → roll, fill and seal tortelli → boil for 4–5 mins → toss in golden sage butter → finish with parmesan and pepper.
